  • Dekkera bruxellensis is a yeast contaminant in winemaking and in ethanol-producing plants. In the latter case, it competes with Saccharomyces cerevisiae for the industrial substrate, leading to decreased ethanol yield. While the presence of D. bruxellensis is often linked to severe economic losses, eliminating it from fermentative processes is a complex task. Since this yeast can also produce ethanol in favorable conditions, why not to take advantage of its full biotechnological potential, in a damage control strategy? Therefore, how can we use D. bruxellensis to our own benefit? How can it be used to increase industrial ethanol production? To answer these questions, it is important to understand the major aspects regarding its fermentative metabolism, which is still poorly understood. To that matter, we propose a series of physiological and genetic experiments that will reveal the metabolic factors leading to this yeast to a maximum ethanol production rate. The results will show us how to outline a strategy to help ethanol producers to maximize industrial yield and minimize economic losses during contamination events.
